Walnut and Tomato Burger Patties Recipe - Vegan

[Makes 6–8 patties, depending on size]
Ingredients
- 1 tablespoon chia seeds – soak in hot water for an hour before use, to gel
- ⅕ red capsicum and ¼ onion – both chopped fine and fried thoroughly in a generous amount of olive oil
- ½ can tomatoes – ideally crushed and sieved, but other types OK – or alternatively could use tomato paste
- ½ teaspoon crushed chilli
- ½ cup corn kernels
- 1 cup Trickett's Grove walnut flour – plus optionally, for added flavour and texture, 5 walnut kernels finely broken/cut up or lightly food-processed
- 4 tablespoons panko breadcrumbs – quantity of breadcrumbs can be adjusted, if needed, to get consistency right.
Method
- Once capsicum and onion are fried, add the ½ can of tomatoes and crushed chilli to the pan, and simmer to reduce/concentrate the tomato. Also add the corn kernels to thaw/warm (if frozen).
- In a bowl, thoroughly mix the walnut flour (and broken/ground walnut kernel if used), breadcrumbs, gelled chia, and tomato/corn/onion/capsicum/chilli mix from the pan.
- Spoon balls of mix into pan and flatten into patties. Fry in a generous amount of olive oil.
